Food: Antonelli's Lands Rare Cheeses, And You Can Partake

As if Antonelli's in Hyde Park didn't house enough cheesy goodness, they've joined a select group of shops around the United States to take part in the Jasper Hill Farm "Conundrum Project."


The goal of the project is for shops to sell exclusive cheeses made by Jasper Hill, a lauded Vermont producer, and then to give Jasper Hill feedback from cheesemongers and customers.

Harbison, the latest cheese that's available, is a mixture of Moses Sleeper, which is buttery and bright, and Winnimere, a runny cheese that has flavors ranging from meaty to mustardy, depending on the batch. Harbison is a cow's milk cheese wrapped in spruce bark strips. The spruce imparts a woodsy aroma to the cheese, which is spoonable and buttery with flavors of mushrooms and hay.

Jasper Hill will send a new "Conundrum Project" cheese to Antonelli's in the near future, so get your hands on some Harbison (and let Antonelli's know what you think about it) before it's all gone.
