Since opening last summer, Burnet Road's La Sombra has become a popular (yet somehow under-the-radar) spot for Rosedale and Hyde Park neighbors. The restaurant specializes in the cuisine of Central and South America, and they're not phoning it in: Executive Chef Julio-Cesar Florez is a native of Lima, Peru. To that end, dishes such as empanadas, cebiches, and tiraditos are par for the course, as are an assortment of grilled meats and South American wines.

We mention all this in recommending The Wine + Food Foundation Of Texas' February benefit dinner, which pairs La Sombra dishes in a multi-course menu with the wines of Postales Del Fin Del Mundo. The wines hail from the Patagonia region of Argentina, and should express terroir reflecting the cooler climates and lower latitudes of the southern tip of South America. The wines have proven popular both at La Sombra and The Austin Wine Merchant, and will be matched with dishes including oysters, tilefish, quail, and New York strip steak.
