Whose definition of fledgling are we going by? Some of the restaurants on the show are 40 years old, they just suck and nobody wants to eat there.

Java Noodles at 2400 East Oltorf. I have never had a worse meal in my life. Some syrupy chicken nonsense. Wasn't even edible. And the free included buffet was a 3 ft. table of hot and cold pans... mostly empty. I think it has potential still.

Remember, Chef Ramsey's goal is to turn a fledgling restaurant into a success. There are more than enough of those to choose from in Austin. The guy could retire here and never run out of work! Of course, we’d all eat at home after we saw his docu-drama “Dance of the Cockroaches” filmed at every Austin eatery. Yum!

Sorry, but it's still a no for me regarding Thai food 'round these parts. Decent? Yes. Good? A few. Really good? No. For Italian I too love Vespaio/Enoteca, however.

I'd like to second Titaya's on Lamar (near the new Half-Price Books location). In addition to the food, the service is among the best in town.

aster's ethopian. i know it's truly wonderful folks who run the show there, but the food misses the mark, and the ambience does, too. so am i gonna have to open my own darn ethiopian restaurant? maybe so. lucky i'm from ethiopia.

I agree about Iron Works too. They serve terrible beef thoguh I doubt Gordon Ramsay could produce anything better.

i took your advice "loudmouth" and read the reviews offered at chowhound to find an overall positive attitude towards the place. while the restaurant has its flaws, i have not once been dissapointed with my experience there. I am a chef (not at vespaio) and have always been very impressed with the culture, skill and discipline of the kitchen there. also, considering the quality of the ingredients (it's apparent) and labor intensive techniques employed, i would hardly call vespaio or its little brother overpriced. to each his own and bon apetit "loudmouth".

Thai Kitchen is good, but they need a make over and I bet the kitchen is scary filthy. adamcookstuff, chowhounds would disagree. http://www.chowhound.com/ I personally think you're just saying that because you paid so much for mediocre Italian.

Thai Kitchen is a little lacking on the ambiance, but their food is delish! Seriously...the Indian Noodle Soup is worthy of the gods. Habana on 6th could use a little Ramsay.

Threadgill's. It completely lives off its reputation, and not food quality, these days. When compared to a Hoover's or Stallion Grill, it's not unlike going to Luby's. There was once a day that it was a great place to eat, but either my tastes have developed, or it's gone downhill. (Yes, it's mean to list somebody. BUT, it's a little like tough love, IMHO)

I think it'd be kinda' mean to name all of the places that could use some help. I think in general a lot of restaurants in Austin achieve the same plateau of edible-but-not-great.

my students just did a project called Kitchen Nightmares where they had to pretend they were going to re-do a restaurant in austin and create a flyer and menu for them. i just showed them this and they freaked out.
