Event Preview: 2nd Annual Mediterranean Festival at Texas Culinary Academy

photo by sashertootie on FlickrIf you're interested in cuisine as well as creating, Texas Culinary Academy is hosting its 2nd Annual Mediterranean Festival tomorrow from 10am-4pm. The event will showcase traditional foods of the Mediterranean, complete with a Mediterranean food symposium, cooking demonstrations, hands-on cooking classes for adults and children, and wine tastings.

The cooking demonstrations will offer tips and tricks for Meze, Tapas, and Tagine from Noon-3pm, while the hands-on classes for adults and children (which will include everything from making fresh mozzarella to fresh pasta to empanadas) will be conducted throughout the day. Meditteranean Wine Seminars will celebrate Spanish, Italian, and French wines from Noon-3pm.

Cooking Demonstrations (Free):
• Tagine with TCA Chef M.L. Krasnick, Noon-1pm
• Tapas with TCA Chef Egil Valentin, 1pm-2pm
• Meze with TCA Chefs Rebecca Barsch-Fischer and James Fischer, 2pm-3pm

Student Symposium (Free):
From 11am-3pm, participants can sample an array of Mediterranean foods featuring olives, olive oil, salt, preserved lemons, quince, grains, legumes, spices, marinated cheeses, ice creams, preserved pumpkin and canelés. Participants attending all symposium stations will be entered into a raffle featuring Mediterranean merchandise.

Classes for Adults and Children: ($10)
Adult Hands-On Classes will include:
• Flatbreads of the Mediterranean, 10 am-11am
• Making Fresh mozzarella, 11am-Noon
• Making Fresh Pasta, Noon-1pm
• Making Dolmas, 1 pm-2pm
• Making Spanish Paella, 2pm-3pm
• Making Risotto, 3pm-4pm

Children’s Hands-On Classes will include:
• Empanadas, 10am-11am
• Fresh Pasta (Gnocchi and Ravioli), 11am-Noon
• Pizza! Noon-1pm
• Quiche, 1pm-2pm
• Filo Fun! (Baklava and Spanakopita, 2pm-3pm
• Ratatouille, 3pm-4pm

Mediterranean Wine Seminars ($10)
Held from Noon-3pm, the seminars will celebrate wines from the Mediterranean regions of southern France, Spain, and Italy and will be presented by Restaurant Chef Instructor Robert Brady in the school’s restaurant, Ventana.
