Little Texas Bistro on Hiatus for Retooling

Little Texas Bistro, the small restaurant with a big reputation, has closed the doors on its Main St. location in downtown Buda. Chef-owner Paul Petersen started the business as a deli and catering service out of the same location after returning to Texas from a stint in some of New York's finest restaurants. The Culinary Institute of America-trained chef started what became a destination eatery for Austinites looking for a great meal, albeit in a slightly out of the way location.
Petersen said that he would like to move into Austin, perhaps near SoCo or East Austin, to be closer to his main customer base. "This is a very small restaurant, and we've simply outgrown it," Petersen told the Statesman. He also said that they often turned people away on busy nights and would like to find a larger establishment, as the current location seats a maximum of 60 customers. He has begun talking to investors and hopes to be able to spend time exploring his options as he seeks funding.
